New Holiday Dessert: Caramelized Pear Cake with Salted Caramel Icing

Looking forward to the 2010 Winter Holidays, we created some new and exciting items for our Winter Holiday Pricing Guide (available by clicking here).


One of these new additions is a delicious dessert perfect for your holiday meal. We start with ripe and juicy Anjou pears, which we slow caramelize with Tahitian vanilla and brown sugar until they are rich and gooey. These caramelized gems get folded into a dense brown sugar cake. Fragrant and moist, this cake is incredible!

But we’re not done. We cut the cake into six layers, generously spreading smooth and creamy salted caramel icing between each layer. This is our favorite icing of the year—sweet, yet with that slight taste of caramelized sugar—with the subtle finish of sea salt! It is the perfect foil for the dense cake!

Atop this delicious dessert, shards of espresso cashew praline perch. Rich and dark in flavor, it cuts the sweetness of the cake, provides a textural contrast, and looks both impressive and festive. This is our favorite dessert of 2010! And, it is also available in individual bite-sized versions!
