Today, we turn our attention to our “deep-dish” Caramel Pumpkin Pie. This pie isn’t like a “regular” pumpkin pie, due to it’s depth (literally, it’s a thick pie!) and it’s depth of flavor!
To start, we create an old fashioned sugar caramel, slow cooked and deep amber in color. To that we add oven-roasted and pureed sugar pumpkin, cream, eggs, Tahitian vanilla, and our favorite autumn spices.
The creamy filling is poured into a hand-rolled pastry crust, livened up a bit with a hint of cinnamon and chili powder!
Once baked, the top of this beautiful pie is garnished with sugared shortbread leaves—the perfect reminder of our favorite season of the year! All together, this pie is a little slice of deliciousness—the perfect ending to your perfect holiday meal!
