Countdown to Thanksgiving: Savory Herbed Beer Bread with Chicory

We continue our countdown to Thanksgiving, by looking at some of our favorite Thanksgiving desserts, confections, and treats created in past years. All of the items we are covering are available on the 2010 Thanksgiving Pricing Guide (available by clicking here). Give us a call or send us an email with questions or orders. We look forward to contributing to your special Thanksgiving gathering!

Yesterday, we discussed our delicious Bacon, Cheddar, and Sage Buttermilk Biscuits. Today, we continue our focus on breakfast and savory foods, and focus on an orenji bread: Herbed Beer Bread with Chicory.

A few years ago, we were fortunate enough to participate in a housewarming event in upstate New York. Our dear friend and client—who continually inspires us with her creativity and generosity—gave delicious herbed beer breads as gifts that year to those who attended the event.

Inspired by that gesture, we ran back to the orenji test kitchens and created our own version! This warm, and slightly sour, bread is full of fresh herbs: sage, rosemary, and thyme, as well as cracked pepper, sea salt, and deeply pungent chicory. Mixed with a bitter ale, and brushed with the finest creamery butter, this recipe is the perfect start to the morning, great for sandwiches, or the perfect accompaniment to your Thanksgiving dinner!

Whether it’s a full sized loaf, half loaf, or mini loaves, this is one bread that is sure to please!

Countdown to Thanksgiving: Bacon, Sage, & Cheddar Biscuits

We continue our countdown to Thanksgiving, by looking at some of our favorite Thanksgiving desserts, confections, and treats created in past years. All of the items we are covering are available on the 2010 Thanksgiving Pricing Guide (available by clicking here). Give us a call or send us an email with questions or orders. We look forward to contributing to your special Thanksgiving gathering!

We have previously looked at a host of our orenji Thanksgiving holiday favorites, including:

Caramel Pumpkin Pie

Sweet Potato Tart with Caramelized Marshmallows & Toasted Pecans

Chocolate Enrobed Dried Fruits

Krispy Cereal Treat Sunflower “Pops”

Bittersweet Chocolate and Pumpkin Cheesecake

Assorted Scones

Spiced Pumpkin & Bittersweet Chocolate Cake

Today, we turn our attention back to breakfast. Here at orenji, we love sweets. But sometimes, first thing in the morning, you need something savory! These biscuits are the perfect solution: Bacon, Sage, & Cheddar Buttermilk Biscuits.

(We should mention, we love bacon, too!)

We start with an old-fashioned buttermilk biscuit dough, hand mixed, rolled and cut. Into our dough we add ample amounts of crisped Applewood smoked bacon, fresh local sage, and sharp Cheddar cheese. When these biscuits bake, they puff, becoming light and airy! They are the perfect way to start the day… or eat for a snack. This year, we might even serve them alongside our Thanksgiving dinner!

Countdown to Thanksgiving: Krispy Cereal Treat Sunflower Pops

We continue our countdown to Thanksgiving, by looking at some of our favorite Thanksgiving desserts, confections, and treats created in past years. All of the items we are covering are available on the 2010 Thanksgiving Pricing Guide (available by clicking here). Give us a call or send us an email with questions or orders. We look forward to contributing to your special Thanksgiving gathering!

Yesterday, we looked at our Pumpkin and Bittersweet Chocolate Cheesecake. Today, we turn our attention to something more whimsical and childlike—krispy cereal treats the shape of autumn sunflowers! These treats are perfect for the kids at your holiday gathering… and the adults as well!

We start with a gooey marshmallow base, infused with a touch of vanilla, to which we add crispy cereal bits. Hand-molded into sunflower shapes (additional shapes available for other holidays!), these treats are then partially enrobed in Belgian bittersweet chocolate, and decorated with milk and white chocolates.

Colorful and festive autumn sprinkles finish these fun treats!

Placed upon sticks for easy eating (or without, if desired), wrapped individually, and tied with autumn ribbon, “bouquets” of these sunflowers make not only a great gift, but also a great centerpiece!

Countdown to Thanksgiving: Pumpkin and Bittersweet Chocolate Cheesecake

We continue our countdown to Thanksgiving, by looking at some of our favorite Thanksgiving desserts, confections, and treats created in past years. All of the items we are covering are available on the 2010 Thanksgiving Pricing Guide (available by clicking here). Give us a call or send us an email with questions or orders. We look forward to contributing to your special Thanksgiving gathering!

Yesterday, we looked at our delicious scones. Today we turn our attention back to holiday desserts, focusing on an orenji favorite: cheesecake. Of course, for the holidays, the perfect cheesecake is Pumpkin, balanced with smooth Belgian bittersweet chocolate!

Our perfect holiday cheesecake begins with a deep chocolate cookie crust. Crispy and sweet, this is the foundation for the dessert which follows!

Atop the crust we slowly bake a layer of creamy cheesecake, dense with Belgian bittersweet chocolate. A lighter layer of pumpkin cheesecake, infused with oven-roasted sugar pumpkin and freshly grated autumn spices rests atop the chocolate layer. The layers—able to be eaten separately if desired—are best enjoyed together, the lightness of the pumpkin balanced by the deep, rich chocolaty base.

We decorate our cheesecake with hand-crafted chocolate leaves and molded acorns, as well as a beautiful orange satin ribbon. Not only is this dessert delicious, but it also can serve as a showpiece for your holiday meal!

Countdown to Thanksgiving: An Assortment of Scones

All of the items we are covering are available on the 2010 Thanksgiving Pricing Guide (available by clicking here). Give us a call or send us an email with questions or orders. We look forward to contributing to your special Thanksgiving gathering!

Yesterday, we looked at our delicious Pumpkin and Bittersweet Chocolate Chip Cake. Today, we turn our attention to scones… available in many varieties! Of course, at Thanksgiving, the most popular are our Pumpkin Spice scones, but each variety is delicious in the morning, afternoon, or evening with a warm cup of coffee, tea, or mulled cider!

Our Pumpkin Scones—made with oven roasted and pureed sugar pumpkin—are gently spiced, and drizzled with vanilla confectioner’s glaze. Moist and delicious, these are the perfect way to start your autumn holidays!

Our Apricot Cream scones are bursting with apricot and vanilla flavor. These are the moistest scones we have ever created, and are almost dessert-like!

Dried Cranberry, Orange, and Bittersweet Chocolate Scones are the perfect solution for that morning sweet-tooth! The bitterness of the cranberries and sour orange are the much-needed complement for smooth Belgian chocolate.

Traditional English Vanilla and Currant Cream Scones are the simplest of our offerings. Each bite is full of the deep notes of vanilla, and the fresh burst of currant flavor!

Countdown to Thanksgiving: Pumpkin & Bittersweet Chocolate Chip Cake

We continue our countdown to Thanksgiving, by looking at some of our favorite Thanksgiving desserts, confections, and treats created in past years. All of the items we are covering are available on the 2010 Thanksgiving Pricing Guide (available by clicking here). Give us a call or send us an email with questions or orders. We look forward to contributing to your special Thanksgiving gathering!

Yesterday, we looked at our delicious Sweet Potato Tart with Caramelized Marshmallows and Toasted Pecans. Today, we turn our attention to our Pumpkin and Bittersweet Chocolate Chip Cake, one of our most popular items during both the Thanksgiving and winter holidays!

We begin with oven-roasted sugar pumpkin, which we puree and spice with fresh cinnamon, ground nutmeg, and grated cloves. This fresh pumpkin puree is incorporated into a dense pound cake batter and studded with the finest Belgian bittersweet chocolate chips. Baked in a fluted tin, the cake is eye-catching as soon as it comes out of the oven!

For color and textural contrast, we drizzle our pumpkin cake with bittersweet chocolate and a vanilla-infused confectioner’s icing. With hand molded chocolate acorns and leaves, these cakes are ready for your holiday meal!

While we have always envisioned this as a conclusion to dinner, we are told that it is also perfect for breakfast, afternoon tea, and an any-time snack! Moist and dense, this cake will keep in the refrigerator for weeks… but we don’t think it will last that long once you try it!

Countdown to Thanksgiving: Sweet Potato Tart with Caramelized Marshmallows and Toasted Pecans

Yesterday, we looked at our delicious Caramel Pumpkin Pie. Today, we turn our attention to our Sweet Potato Tart with Caramelized Marshmallows and Toasted Pecans!

To be honest, we have been surprised by the demand for this particular tart. Growing up, sweet potato pie was not something that we ate, here at orenji, and it wasn’t until a friend and client requested a sweet potato dessert that we even considered it. Now, it is one of our most popular items each Thanksgiving and Christmas.

We start with our chili-infused sweet pastry crust, which we fill with a sweet and creamy custard. The custard begins with sweet potatoes, roasted in the oven to give depth of flavor, pureed and strained (to remove those stringy bits!), and lovingly mixed with cream, eggs, vanilla, and spices.

We bake our tart, topped with miniature marshmallows and toasted pecans. The pecans provide a textural crunch, whereas the marshmallows lend a sweet, gooey topping to the already decadent tart!

Decorated with shortbread seasonal leaves, this is a beautiful and delicious dessert—serve it cold, or warm it in the oven prior to serving. Either way, it is a perfect ending to your Thanksgiving meal!

Countdown to Thanksgiving: Caramel Pumpkin Pie

We continue our countdown to Thanksgiving, by looking at some of our favorite Thanksgiving desserts, confections, and treats created in past years. All of the items we are covering are available on the 2010 Thanksgiving Pricing Guide (available by clicking here). Give us a call or send us an email with questions or orders. We look forward to contributing to your special Thanksgiving gathering!

Today, we turn our attention to our “deep-dish” Caramel Pumpkin Pie. This pie isn’t like a “regular” pumpkin pie, due to it’s depth (literally, it’s a thick pie!) and it’s depth of flavor!

To start, we create an old fashioned sugar caramel, slow cooked and deep amber in color. To that we add oven-roasted and pureed sugar pumpkin, cream, eggs, Tahitian vanilla, and our favorite autumn spices.

The creamy filling is poured into a hand-rolled pastry crust, livened up a bit with a hint of cinnamon and chili powder!

Once baked, the top of this beautiful pie is garnished with sugared shortbread leaves—the perfect reminder of our favorite season of the year! All together, this pie is a little slice of deliciousness—the perfect ending to your perfect holiday meal!
